Chicken rice at home is usually prepared by stir-frying rice and basic ingredients with a ketchup base. At Shiseido Parlour, we first pre-cook our ingredients. We spend the time to simmer the chicken, onion, and mushroom with a tomato base and ketchup before we stir-fry them with rice. This way, the sauce is absorbed into the big chunks of chicken and the sour tomato sauce is made mellow, giving the chicken rice a new and different savor.
